EASY PUMPKIN PANCAKES

EASY PUMPKIN PANCAKES

PREPERATION TIME:

COOKING TIME:
7 - 10 MINUTES

SERVES: 4


PANCAKE MIX

 

•​​ 3 eggs
•​​ 2 tbsp melted coconut oil
•​​ 1 tbsp maple syrup
•​​ 1 tsp vanilla extract
•​​ 1/4 cup + 2 tbsp Coconut flour
•​​ 2/3 cup Almond Flour
•​​ 1/2 tsp baking powder
•​​ 1/3 cup pumpkin pie purée
•​​ 1/3 water

 

PUMPKIN PIE PURÉE

 

•​​ 2 cans of 14oz pumpkin
•​​ 2 tbsp pumpkin pie spice
•​​ 1/4 cup Maple syrup
•​​ 1 cup almond milk
•​​ Pinch of salt
•​​ 1 tsp vanilla extract
•​​ 1/4 cup of water or more if needed to thin it out

Simply mix everything together in a blender or whisk really well, spoon out onto a hot pan, and start flipping.
