Can you tell us a bit about you and Restaurant Joel?
Hi! So I’m Joel. I’m 30 years old and obsessed with cooking. It’s been almost 16 years now I’ve been in kitchens & I guess I’ve now found myself pursuing a more creative & open space of the industry. Restaurant Joel is a dream that I truly hope will come to fruition one day.

What's your favourite cookbook at the moment and why?
I'd say any of Ottolenghi’s books. He’s one the most inspiring chefs in terms of colour, flavour & simplicity. I feel he has this unsaid confidence in what he does which really shows in his books.

You use Falcon enamelware in and around your kitchen. What’s your favourite product and what do you use it for?
For me the range speaks of nostalgia. I grew up in a family that went camping close to 6 weeks a year, and mum loved enamel plates so it holds good memories. I'd say the 3 pint jug.. always a full one in the fridge.

Do you have a favourite recipe from your new cookbook?
I do but I can't share it just yet. It involves pasta, tomatoes & whole lot of chilli!!!

What are you loving about Sydney at the moment?
The ocean.. winter swells are incredible. I swim most days of the week, it’s an essential part of my day.

When is the cookbook due to launch?
Early next year but it’s available to pre order now. It's been a dream of mine for a long time. 70+ recipes featuring a strong emphasis on vegetables and seafood, my favourite things to eat and cook. It's a display of my look on life, the food I love to create, my love for photography and a display of some never before seen landscape work.
