TELLING STORIES THROUGH PIE

Stacey Mei Yan Fong is a Brooklyn-based baker and author of 50 Pies, 50 States - a heartfelt tribute to America, told one pie at a time. Inspired by regional ingredients and personal connections, her cookbook began as a creative outlet during her journey to a permanent passion.

Can you introduce us to what you do and what inspires you the most?

Hey y'all! My name is Stacey Mei Yan Fong. I am a baker and author most known for my debut cookbook 50 pies, 50 states. In the cookbook, I baked a pie for every state in America based on state foods, fruits or some sort of regional cuisine and dedicated the pie to someone I knew from that state. The cookbook began as a project I gave myself while I was applying for my permanent residency.

What inspires me most in hopes to not to sound corny is the connection that people can find through food no matter where they are from. I have chosen to explore this emotion and connection through the medium of pie. Pie is a synonymous comfort food throughout the world in all its variations. I've found with the versatility of pie being able to be savory or sweet, I am able to develop new recipes around it to explore new flavors and thoughts. Also thoughts, emotions and tough conversations are much easier to have when there is something to eat in front of you, especially pie.

Besides pie itself, music plays a huge part in my recipe development. While I'm baking I'm always listening to music. I'm a big fan of old country music, Dolly Parton, Emmylou Harris and John Prine's of the world. Just a really big fan of storytelling in all its forms. Country music has really influenced the way I write and the way I bake.

What are you looking forward to this summer?

I am looking forward to more pies outside! Summer is really when New York (where I live) comes alive! I can't wait to eat pie with the people I love somewhere surrounded by nature, by the ocean most importantly just washed in sunshine and warmth.

I am also going on a big cross country road trip to go see an artist I love Sierra Ferrel play at Red Rocks in Colorado. So I am really looking forward to that!

What is your favourite Falcon product and why?

Can I pick two?! I am obsessed with the pie dishes, as a set of 4 and the fruit bowl!

The fruit bowl is the perfect place for me to store all my future pie fillings. The color and the height of the piece makes it feel like building a still life on my counter top.

The set of 4 pie dishes are the perfect thing to bake a little pie in to take to a friend, to make a little and have a little salad in. The size truly is perfection! Living in Brooklyn, I love for an object to be multi use and the pie dishes are a work horse in the kitchen.
